Salvin’s Jam Tart

A very rustic jam tart that is delicious.


  • 300g plain flour
  • 100g brown sugar
  • 150g butter
  • 2 eggs
  • pinch of salt
  • 1 lemon
  • half a packet (7g) of cake yeast
  • a jar of jam (preferably salvin’s rhubarb and apple jam)
  • 3 apples
  • liquid honey


  1. Put the flour, lemon rind, sugar, pinch of salt and yeast into a bowl.
  2. Add the softened butter and egg yolks
  3. Mix by hand until the mixture comes together
  4. Push (with your fingers) the mixture into a buttered tray making sure to make thick edges
  5. Cover with the jam
  6. Cover with thin slices of apple or almonds.
  7. Cover with a thin layer of honey
  8. Cook at 180°C for 30/40 minutes until browned.
