Piedmont’s green sauce

The green sauce is a typical Piedmont sauce that goes very well with some of our traditional dishes, especially boiled beef and sliced tongue. We also serve it with our fresh cows cheese.


  • 50g parsley leaves
  • 20g anchovies
  • 1 garlic clove
  • 1 spoon of spicy ketchup
  • 4 spoons of olive oil


  1. chop the parsley finely with a half moon slicer and place it in a bowl
  2. chop the anchovies and crushed garlic
  3. Add them to the parsley
  4. Mix in the ketchup and olive oil
